A delicious snack for the afternoon, but also perfect if you have visitors, because these cookies are incredibly delicious!
- Line a cutting board with baking paper. Put 10 spoonfuls of Speculaas paste on it. You may flatten them a bit. Wrap cling film around this and put it in the freezer for at least an hour.
- Cut the butter into pieces and place in the mixing bowl. Mix this until fluffy. Add the sugars to this and make sure it is mixed just right. You don’t want the butter to get too warm!
- Now add the eggs and mix until incorporated.
- In a separate bowl you can now mix the self-rising baking flour, wheat flour, salt, baking powder and cinnamon. After mixing, add this to your butter mixture. This will make a firm cookie dough.
- Add the white chocolate pieces to your dough. Mix through with a spatula or your hands.
- Now you make the cookies: prepare baking paper on a baking sheet. Weigh out about 100/110 grams of dough. Roll it into a ball and make a well in it with your thumb. Now fold the frozen Speculaas paste into this.
- Make sure the dough is well sealed. Work quickly so the chocolate doesn’t start to melt. Now place it on the baking sheet.
- Repeat until you have used all your dough. You will get around 10 cookies. Now they can still be close together because they will go into the freezer for another 8 hours.
- Cover with cling film and put them in the freezer.
- Preheat the oven to 180 degrees. Place the cookies with enough space on the baking sheet (bake per 4 or 5) and bake for 15-20 minutes. When the edges are golden brown and the top also has some color they are ready! Let them cool sufficiently before removing them from the tray.
The cookies are nice and soft and filled with Speculoos. Time to enjoy them!
