Airy tiramisu 

This speculaas tiramisu is a perfect dessert for light summer dinners. I'm sure there's still room for dessert!


  • 250 ml whipping cream soy
  • 1 sachet Klopfix
  • One pack of De Ruiter’s speculaas cookies
  • 2 americanos
  • optional: a dash of rum through the americano
  • a mold of approximately 20 x 20 cm
  1. Pour the package of whipped cream into a mixing bowl and pour the bag of Klopfix on top. 
  1. Mix this mixture for several minutes until it has stiffened. Now put it in the refrigerator for an hour. 
  1. Prepare the americanos in advance, if you want stronger coffee, we recommend espressos. Pour in a splash of rum or port if you want alcohol mixed in with the tiramisu. 
  1. Place a layer of speculaas cookies down, pour the coffee mixture over them and let the cookies absorb the coffee. 
  1. Now spread a layer of whipped cream over this. 
  1. Repeat these steps until you run out of whipped cream or cookies. 
  1. Sprinkle the top with crumbled speculaas cookies and refrigerate for at least another half an hour.
