Banana bread with speculaas

Delicious banana bread that you can make in preparation for the week! Eat it for breakfast, snack or addition to your lunch. It is also a perfect dessert!


  • 300 grams whole wheat flour
  • 150 grams sugar
  • 2 teaspoons baking powder
  • 50 grams oatmeal
  • 50 grams pecans
  • 1 teaspoon cinnamon
  • 4 ripe bananas (medium size)
  • 100 grams speculaas cookies
  • 90 ml oil
  • 1 tablespoon vinegar
  • 120 ml water
  • 120 ml water
  1. Start by preheating the oven to 180 degrees Celsius. 
  1. Blend or pound the speculaas cookies until they are crumbs. 
  1. Combine all the dry ingredients in a large bowl. 
  1. Set aside 1 banana. Use an immersion blender (or blender) to puree the remaining ingredients into an even mixture. 
  1. Carefully mix this into the dry ingredients, then pour the batter into a cake pan. 
  1. Slice your remaining banana lengthwise into 3 slices. Garnish the top of your banana bread with these. Sprinkle some remaining speculaas crumbs on top. 
  1. Let the bread bake for 40 minutes until it turns a golden-brown color.
