Donuts with speculaas glaze 

Donuts, but healthier! These snacks are baked in the oven instead of deep-fried. Delicious with a cinnamon sugar coating or a speculaas glaze.


  • 125 grams wheat flour
  • 100 grams sugar
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • a pinch of salt
  • 120 ml vegetable milk
  • 1 large tablespoon of applesauce
  • 1 tablespoon olive oil
  • 1 teaspoon vanilla aroma
  • 80 grams sugar
  • 1 big teaspoon of cinnamon
  • 55 grams of plant-based butter (melted)
  • 3 large tablespoons of speculaas paste
  • 3 speculaas cookies
  • Donut mold that can go in the oven
  1. Preheat your oven to 190 degrees Celsius. 
  1. Put all the dry ingredients (except the 80 grams of sugar, large teaspoon of cinnamon and speculaas cookies) in a mixing bowl and mix with a whisk. 
  1. Add the wet ingredients (except the speculaas paste and 55 grams of melted butter) to the dry ingredients. Stir until it is a smooth mixture. 
  1. Fill the doughnut mold to three-quarters with the batter. Bake them for 10-15 minutes in the preheated oven. 
  1. Let the doughnuts cool well before decorating them with the toppings. 
  1. Mix the remaining sugar and cinnamon together in a shallow bowl. Crumble the Ruiter’s speculaas cookies in another bowl. Heat the Ruiter’s speculaas paste in a shallow bowl as well. Do the same with the melted butter. 
  1. Dip the doughnuts first in the melted butter and then in the cinnamon sugar. This will make the cinnamon sugar stick properly. 
  1. Dip the donut in the speculaas paste and then in the crumbled cookies.
