Christmas cookies 

Delicious cookies you can serve with coffee, tea or when your visitors knock on your door during the holidays!


  • 150 grams white caster sugar
  • 1 sachet vanilla sugar
  • 200 grams unsalted (plant-based) butter
  • 1 egg
  • 400 grams of wheat flour
  • 200 grams cream cheese or dairy spread
  • 2 tablespoons of speculaas paste
  • 1 crumbled speculaas cookie
  • Colored icing
  • Hand mixer - Sieve - parchment paper
  1. Using a hand mixer, mix the caster sugar, vanilla sugar and butter until creamy. Then add the egg and mix until smooth 
  1. With a sieve, add the wheat flour and then mix it. It will be a firm dough! Wrap your dough in cling film and let it rest in the refrigerator for at least two hours.  
  1. After two hours, take the dough and roll it out until it is half an inch thick. You can dust some flour on this so it won’t be as sticky, but don’t use too much! The cookies might get too crumbly. 
  1. Now preheat your oven to 175 degrees Celsius. 
  1. Use your favorite (Christmassy) cut-out shapes and place the cut-out cookies on a baking tray lined with parchment paper. Try to bake equally sized cookies together so that the smaller cookies have a smaller risk of burning. 
  1. Put the baking tray in the oven and bake for about 8-12 minutes, until the cookies are golden brown. 
  1. Let the cookies cool for a while before removing them from the baking tray! They are still soft because of the heat of the oven not having hardened the sugar yet. 10 minutes of cooling should be enough! 
  1. When the cookies are completely cooled you can stick them together with our delicious speculaas dipping: mix the speculaas paste, cream cheese and the crumbled speculaas cookie in a bowl until well mixed. Put a cookie down, spread some dipping on top and stick another cookie on top! 
  1. Now it’s time to decorate the cookies with colored frosting. Have fun!
