Waffles for dessert 

Waffles can of course be made as a delicious Sunday breakfast, but with this spice flavored ice cream twist it becomes a delicious dessert! With this recipe, you will make about 6-8 waffles.


  • 240 grams wheat flour
  • 1 tablespoon baking powder
  • a pinch of salt
  • 1 tablespoon caster sugar
  • 375 ml plant-based milk
  • 2 tablespoons apple cider vinegar
  • 60 ml olive oil or coconut oil
  • 1 teaspoon vanilla flavor
  • 2 speculaas cookies finely chopped
  • 1 tablespoon warmed speculaas paste
  • 1 scoop of ice cream
  • whipped cream
  • Waffle iron
  1. Turn on your waffle iron. 
  1. In a cup, mix together the vinegar and plant-based milk. Let this rest for 5 minutes. 
  1. Add all the dry ingredients into a mixing bowl. Stir this well. 
  1. Mix the plant-based milk mixture into the dry ingredients and add the vanilla flavoring. 
  1. Depending on your waffle iron, use 2-4 heaped tablespoons of batter to fill your iron for one waffle. 
  1. Bake the waffles until golden brown. Wait until no more steam comes out of your waffle iron, then the waffles are done. 
  1. Place the baked waffles on a rack to cool. 
  1. Serve the waffles with a scoop of ice cream (we recommend this delicious speculaas ice cream) and a dollop of whipped cream. Garnish with some melted speculaas paste.
