Cheesecake brownie with speculaas 

Cheesecake meets brownie! A delicious cake served on a base of speculaas cookies. This is what we call another mix that you must try!

    Requirements

  • 2 dark chocolate bars
  • 50 grams cocoa powder
  • 100 grams fresh Zealand flour
  • 1 sachet of baking powder
  • 150 grams unsalted butter
  • Pinch of salt
  • 120 grams granulated sugar for the brownie
  • 20 grams of granulated sugar for the cheesecake
  • 3 eggs for the brownie
  • 1 egg for the cheesecake
  • 175 grams caster sugar
  • 2 teaspoons vanilla sugar
  • 300 grams cream cheese
  • Speculaas cookies for the bottom
  1. Place the speculaas cookies in a greased cake pan. Because of the round cake pan you won’t get the cakes to fit perfectly, but that’s not a problem. The brownie layer that comes on top (and in between) will make it all fit together. 
  1. Melt the chocolate bars, butter and sugar in a bain marie and let the mixture cool. 
  1. Beat 3 eggs until frothy and add the chocolate mixture to this. Mix again. 
  1. Add the baking powder, vanilla sugar, flour and cocoa powder and mix well. 
  1. Pour the chocolate mixture into greased cake pan. 
  1. Mash the cream cheese in a clean mixing bowl and add an egg, the sugar and a splash of milk. Mix until a smooth mixture forms. 
  1. Pour cheesecake over the brownie. Use a spatula to make the top look neat. 
  1. Bake the brownie at 150 degrees Celsius for about 40 minutes. 
  1. Is it done? Then let it cool off. 
  1. Voilà! A delicious snack is waiting for you!
