Cheesecake bites

A fresh snack that you put together in no time! Decorate it with our speculaas topping and you have a festive dessert.

    Requirements

  • 175 grams De Ruiter’s speculaas Windmill cookies
  • 50 grams unsalted butter
  • 300 grams of cream cheese
  • 90 grams granulated sugar
  • 2 eggs
  • 60 grams sour cream
  • 1 teaspoon vanilla extract
  • 10 grams flour
  • one tablespoon melted speculaas paste from De Ruiter’s for garnish
  1. Crumble the speculaas cookies. 
  1. Melt the butter in a pan, then add the crumbled speculaas.  
  1. Stir well and spread this mixture in your baking pan. Put it in the fridge for 10 minutes. 
  1. Mix the cream cheese and sugar until smooth. Then add the eggs one at a time. Next, add the cream cheese and vanilla extract and mix in briefly. Finally, mix in the flour.  
  1. Spread the mixture over the bottom and bake the cheesecake for 40 minutes at 150 degrees.  
  1. Let the cheesecake cool in the oven to room temperature and then put it in the refrigerator for at least 4 hours.  
  1. Once the cheesecake has stiffened, you can cut it into 16 pieces. Melt the speculaas paste and use a spoon or piping bag to draw strands over the cheesecake.  
  1. Finally, you can crumble another speculaas cookie and spread it over the cheesecake. Enjoy your meal!
