Speculaas brownie 

This brownie is enriched with speculaas cookies. This way you have a delicious pastry on the table for when you are expecting visitors.

    Requirements

  • 250 grams flour
  • 250 grams sugar
  • 50 grams cocoa
  • 150 grams dark chocolate
  • 1 tablespoon cornstarch
  • 1 sachet baking powder (16 grams)
  • 300 ml water
  • 200 ml sunflower oil
  • a dash of vanilla flavor
  • 8 De Ruiter’s speculaas cookies
  • 1 large tablespoon speculaas paste
  1. Preheat the oven to 180 degrees and line your baking tin with parchment paper 
  1. Sift the flour, cocoa, cornstarch and baking powder into a mixing bowl. After this, add the sugar. 
  1. Melt the dark chocolate in a bain marie and add it to the dry ingredients along with the water, sunflower oil and vanilla flavoring. Mix this well. 
  1. Break up De Ruiter’s cookies (or chop them finely with a knife) and add them to your batter. Leave the larger pieces out of the batter. 
  1. Now use the hot water from the melted chocolate to melt the De Ruiter’s speculaas paste. 
  1. Pour your batter into the baking tin lined with parchment paper and decorate the top with the warmed speculaas paste and the remaining pieces of De Ruiter’s speculaas cookies. 
  1. Bake the brownie for 35 minutes at 180 degrees until a skewer comes out clean when poked.
