Speculaas “rotsjes”

    Requirements

  • 100 grams dark chocolate
  • 4 speculaas cookies
  • Heatproof bowl
  • Spatula
  • Parchment paper
  1. Break the speculaas into small pieces and place them on a sheet of baking paper. 
  1. Melt the chocolate in a bain marie or in the microwave. Stir regularly until the chocolate is completely melted. 
  1. Pour the melted chocolate over the pieces of speculaas on the baking sheet. Make sure the speculaas pieces are completely covered with chocolate. 
  1. Allow the speculaas rotsjes to set in the refrigerator for at least an hour. 
  1. Remove the speculaas rotsjes from the refrigerator and carefully break them into pieces.
