A royal dessert

A perfect dessert for King's Day! Not only fresh, but also deliciously sweet. The peaches make this a real treat.

    Requirements

  • 250 grams mascarpone
  • 100 ml whipped cream
  • 1 sachet vanilla sugar
  • 2 tablespoons sugar
  • 4 speculaas cookies
  • 150 grams canned peaches
  • Immersion blender/blender
  • Hand mixer

Preparation: 

  1. Drain the peaches and then puree them with the immersion blender or blender. Set aside, you will use them a little later. 
  1. Put the mascarpone, whipping cream, vanilla sugar and plain sugar in a mixing bowl. Mix together with the hand mixer until you have a nice thick cream. 
  1. Prepare glasses in advance. Crumble the speculaas cookies and melt the butter. Add this together in a mixing bowl. Divide this mixture over your glasses and press it with the back of a spoon. 
  1. Next, spoon the creamy mixture into the glasses. Fill the glasses up to 3/4, now you can smooth the creamy mixture and place the peach puree on top. 
  1. You can serve the desserts immediately, but if they have been in the refrigerator for at least an hour they are even tastier. Just before serving, stick in a speculaas dollup!
